One of my go-tos in hot weather is a soba noodle salad with grilled salmon that I buy from the Whole Foods prepared foods counter. The pre-cooked protein keeps the time standing over a hot stove to a minimum. This takes a little bit of prep time but it’s so worth it.
1. Cooked soba noodles dressed with sesame oil and soy sauce.
2. Grilled salmon, broken up with your hands. (You could use any protein here, cooked shrimp, chicken… etc.)
3. Sliced egg (scrambled, cooked in a wok)
4. Sliced scallions
5. Cucumber, cut in thin matchsticks
(Lately, I’ve been adding thinly sliced, cooked baby bok choy and edamame to up the vege factor)
Dress everything with sesame oil and soy sauce. Serve with an optional garnish of nori strips and some Sriracha for heat.
