What do you do with leftover herbs and stuff? Pesto it.

I grabbed a handful of the green garlic I got in my CSA, some mint, basil, parsley and a couple of anchovies and pummeled it in the Cuisinart with some extra-virgin olive oil. It was really tasty over chicken! I served it with smashed Parm potatoes and salad greens dressed with lemon and olive oil.

I have leftovers that I think would go nicely over crispy-skin salmon. One dinner down for next week…
