I know, I know… like you need another recipe for what is ultimately a bowl of stuff you need to use up but this grain bowl is tasty!

(Grill some chicken ahead of time and this dinner will come together in no time!)

For the dressing:
1-inch piece ginger, peeled and grated
3 tablespoons red miso
2 teaspoons sugar
3 tablespoons or so soy sauce
Juice of 1/2 lime
1 tablespoon or so grapeseed oil

Grilled chicken breasts (Didn’t even marinate these, just seasoned with salt and pepper)
Shredded kale
Shredded carrots
Avocado
Cooked quinoa
Sriracha, to serve

Dump kale in a large bowl and drizzle with some of the dressing. Using your hands, massage the greens with the dressing until they start to soften. Don’t skip this step. This is the difference between a good kale salad and one that you choke on/down.

Add quinoa, chopped chicken, shredded carrots and avocado (cut into pieces) and add a little more dressing. Toss to coat and combine. Serve with Sriracha at the table.
