As a full-time working mom, the only way for me to get dinner on the table during the week is if I plan ahead. I am borderline obsessive about this because it makes my life so much easier in the long run: No post-work grocery store runs and no time wasted wondering what to have for dinner means I can hit the ground running when I get home and have dinner on the table by 7.

Here’s this week’s dinner plan (Friday is always pizza night!):

Sunday – Chicken Soup
D-I-Y chicken soup (super easy). We had Shake Shack for lunch so I tried to lighten up for dinner (because I can never NOT pig out at Shake Shack).

MondayPasta Pesto
Meatless Monday (and too many unsalted shelled pistachios to get rid of). Also, because my son loves pesto.

TuesdayGrain Bowl
Grilled chicken breasts, kale, quinoa, avocado… all the good stuff to make myself think I’m healthy.

WednesdayTurkey Meatloaf
With buttered egg noodles on the side of course!

ThursdayStir-Fried Pork and Bok Choy with Noodles
When I made dumplings the other week, I had leftover filling (ground pork with cabbage, ginger and scallions – yum!) so I froze it. I figured at some point, I could cook it up with some greens and rice noodles. No time like the present!
